Plantain chips in the comfort of your home, DIY..
Plantains are a staple and much loved food in Nigeria and many other parts of the world. Some reasons why we love plantains so much:
- Easy preparation
- Packed with sweetness and require little or no seasoning
- Complement many other foods and meals
- Can be prepared with different cooking techniques e.g. roasting, frying, boiling,baking, or eaten raw
- Healthy….just to mention a few
Growing up in Nigeria, plantain chips was a snack I fell in love with earlier on in primary school. I think plantain is one of those meals you can never have enough off; fried plantains (a.k.a dodo in Nigeria) are usually the first to go in most parties and events where they are on the menu.
On my lazy days I prefer to just fry my plantains and eat them as is or with a sauce on the side. However, I have been working on ways to cut down on frying and my consumption of oil as well as looking for new ways of eating my meals. This baked plantain recipe happens to be a result of all these.
Lest I forget to mention, I had these chips with guacamole and it was a different level of deliciousness.
I must not forget to mention that it was healthy as can be. The Mr and I wasted no time in clearing out this dish…imagine I got my husband to eat guacamole without complaints….that’s the power of PLANTAINS;)
I hope you enjoy making your plantain chips as much as you enjoy eating them:) Here’s my recipe
- 2 firm ripe or unripe plantains
- 2 tablespoons melted olive or coconut oil
- Salt & pepper, to taste
- Sharp pairing knife or mandolin slicer
- Baking trays or cookie sheets
- Parchment paper or foil paper
- Preheat the oven to 350 degrees F.Place parchment or foil paper on 2 large baking pans/cookie sheets
- Cut off both ends of the plantains. Cut a thin vertical slit down each plantain,Try not to cut too far into the flesh. Peel off the skin and discard.)
- Using a sharp pairing knife cut plantain into very thin slices, as evenly as possible (or cut length-wise using a mandolin).I used a knife for this recipe, but a mandolin will give you better results If your knife skills are wanting:)
- In a bowl, combine melted oil, salt, and pepper.Toss the plantain slices in the oil mix. Place the slices in a single layer on the baking pans.
- Bake the plantain slices for 15-20 minutes, Turn the pans about half way through.
- Plantain chips are done when the edges begin to brown. (Watch them toward the end and remove any of the thinner slices first, as they will brown up quickly and can burn before the other chips are finished cooking)
- The chips are delicious right out of the oven or cooled down as well.
- For a more enjoyable experience; serve the plantain chips with a dip such as pepper sauce, salsa, guacamole etc.
