Nigerian Stick Meat-Mini-Beef Skewers

Stick meat is the Nigerian version of a beef kebab or skewer, the only difference is that the beef pieces are much smaller in size and stacked on a toothpick instead of a larger wooden skewer; so you could call them mini-beef skewers or kebabs. It is a popular small chop and snack in Nigeria and is really easy to make;you can hardly go wrong with it.I especially enjoy stick meat when it has a bit more pepper and the onions are fresh, just like suya:)

INGREDIENTS

  • 1 pound beef
  • Bell peppers (Red, green yellow, orange…Use the any combination and number of your choice)
  • 1 onion bulb
  • 3 seasoning cubes (maggi or knorr)
  • 2 teaspoons dry pepper or 1 scotch bonnet pepper/atarodo
  • 1 teaspoon curry
  • a dash of thyme
  • 1 teaspoon minced garlic and ginger
  • Some water
  • 3 tablespoons veg/canola oil (If you are FRYING the beef pieces)
  • 4 tablespoons melted butter/olive oil (If you are BAKING the meat pieces)
  •  A pack of toothpicks

PREPARATION

  1. Cut the meat into thin slices; then chop into cube pieces
  2. In a bowl, put the seasoning cubes, salt, dry or fresh pepper,minced garlic & ginger,thyme and curry; stir properly
  3. Add the cubed beef pieces to the spices in the bowl and mix properly.
  4. Set the meat aside to marinate for at least 30 minutes or more (the longer the meat and spices sit together, the tastier the beef will be)
  5. Once the meat is done marinating,boil for about 10-15 minutes. Use as little water as possible, so as to retain the flavor of the spices
  6. After boiling the meat,you can fry or grill the beef pieces
  7. If frying, heat the vegetable oil in a frying pan and fry the beef pieces till they turn dark brown OR If grilling, coat the beef pieces with butter or olive oil;transfer into a foiled buttered baking pan and grill/broil in the oven for about 10-15mins or until the turn dark brown
  8. Chop the bell peppers and onions into your desired shapes (square,triangles etc.) IMG_0452
  9. I prefer making my kebabs with fresh vegetables; but If you don’t you could season the vegetables and fry or grill them for about 2 minutes
  10. Using a toothpick; arrange the beef and vegetable pieces as you desire

Serve with a chilled drink like Nigerian Zobo
